Tomatenrisotto kochen

Schritt 1 / 1 - Risotto zubereiten

Zwiebel fein hacken und zusammen mit dem Knoblauch in einem Topf mit etwas Olivenöl bei mittlerer Hitze ca. 5 Minuten andünsten. Dann den Reis zugeben und noch ein wenig (ca. 1 Minute) weiterdünsten. Anschließend mit ca. 375 ml Brühe sowie etwa der Hälfte der pürierten Tomate aufgießen, die Basilikumblätter zugeben und unter gelegentlichem Rühren 10 Minuten köcheln lassen.

Das restliche Tomatenpüree und die restliche Brühe dazugießen, umrühren und weitere 10 Minuten köcheln lassen. Mozzarella in ca. 1 cm große Würfel schneiden, Parmesan reiben. Risotto vom Herd nehmen und die zwei Käsesorten unterheben. Mit Salz und Pfeffer abschmecken. Guten Appetit!
